This keto raspberry chocolate candy recipe is perfect for chocolate lovers on Valentine’s Day. You only need 5 ingredients and you can easily make these chocolates in a few minutes. Find a cute Valentine’s Day candy mold and present these sugar free chocolates to your sweetie or just make them for yourself! Each one has just 0.1g net carbs!

Every year I try to think of a few more keto recipes that I can make for Valentine’s Day. And because I’m not much for baking I always seem to come up with easy sweet treats for my sugar cravings.

This year I made some keto raspberry chocolate candy. It’s a very simple recipe but what I like about it is that you can easily make it your own and play around with different flavors and add ins and I’ll show you how later in this blog post.

You only need a few simple ingredients and you can make these sugar free dark chocolate candies in minutes. And then keep them in the refrigerator or freezer for a quick keto snack. Each candy has just 0.1g net carbs.

5 ingredients you need to make keto chocolates.

All I used to make these is coconut oil, unsweetened bakers chocolate, cocoa powder, Swerve confectioners sweetener and raspberry extract.

As far as the raspberry extract, if you can’t find that or that flavor doesn’t appeal to you, try another one. I know Walmart has a nice selection of flavor extracts in the baking aisle.

The unsweetened bakers chocolate you can find just about anywhere and that brand is from Aldi.

The Guittard unsweetened cocoa powder is a special buy but it’s definitely worth it. I get it on Amazon because it’s lower in carbs than regular cocoa powder and is really rich in color and flavor. I use it in all of these keto recipes.

If you can find it try Divine cocoa powder or just use regular.

Candy molds and flavor extracts and where to find them.

While this is a raspberry flavor candy recipe I also made some butter scotch flavored ones and I often use peppermint extract with this recipe. Play around and have fun!

Above you can see one of the chocolate molds I used. I got it at Target in their dollar section at the front of the store. But check out your local dollar store. They often has seasonal candy or ice cube molds there and I buy them and save them for recipes like this.

The other silicone mold I used today was one I bought at TJ Maxx but they have tons of themon Amazonand they are inexpensive. You can also find molds at JoAnn Fabrics, Walmart, Dollar General and candy making stores.

My Amazon Store has lots of molds and other candy making supplies and ingredients if you are interested.

How to make keto raspberry chocolate candy.

Step 1: Measure and add the Swerve sweetener, coconut oil, bakers chocolate and cocoa powder into a glass pyrex measuring cup if you have one.

Pyrex measuring cups work great because you can microwave them and they have a spout to help you pour into molds. But if you don have one just use a microwave safe glass bowl.

Step 2: Place in the microwave and cook for 1 minute. Take it out and stir the chocolate mixture for about a minute. If everything melts you are ready to add the raspberry extract. If not put it in the microwave again for 15 seconds and stir again. You don’t want to over cook it.

Step 3: Get your silicone candymold ready. Sometimes if they are too floppy I place them on the smallest baking sheet I can find because you have to put these in the freezer. They will spill if you try to put them in without support underneath.

Pour the chocolate into the molds as soon as it comes out of the microwave. Fill the molds and then place in the freezer for about 10 minutes and they should be hard enough to pop out. If not put them in for 5 minutes more.

Step 4: Pop out the chocolates and store in an airtight container or ziplock baggie in the freezer or the refrigerator.

NOTE: Because we are using coconut oil and not cacao butter they will melt in your hands from the heat. So you can’t store these on the counter.

Other flavors to add to your low carb candy.

  • flavored extracts – Try flavors like peppermint, raspberry, orange, caramel, butterscotch, banana, strawberry, almond, cherry or more. Just stir in the extract after everything has melted.
  • toasted unsweetened coconut– Toast unsweetened coconut flakes in a dry pan over medium heat. Make sure to watch it so that it doesn’t burn. Add to the mold before pouring for achocolate crispy candy.
  • peanut butter powder and nut butters– I use PB2 powder in mychocolate peanut butter candies but you can also use nut butter. Just add them to the pyrex cup before microwaving so it blends in well.
  • nuts & seeds– Just put in one or two into the molds before pouring. You could also chop them up. Try almonds, pecans, walnuts or macadamias. For seeds try sunflower seeds, chia seeds or pepitas (pumpkin seed kernels).
  • spices– Add a pinch of cayenne pepper, chai spices, pumpkin pie spices or cinnamon for a unique flavor.
  • espresso powder or matcha green tea powderfor a bit of flavor and caffeine
  • low carb berries– Berries are rather low in carbs so try berries like fresh raspberries, strawberries, blueberries etc.

Keto Raspberry Chocolate Candy for Valentine's Day

This easy keto raspberry choclate candy recipe is one you will want to make again and again for a simple sweet low carb treat. You only need 5 ingredients and there are many ways to change up the flavors to make more sugar free candies.

Ingredients

  • ¼ cup coconut oil
  • 2 oz unsweetened bakers chocolate
  • 2 tablespoons unsweetened cocoa powder (I like Guittards or Divine)
  • ¼ cup Swerve confectioners sweetener
  • 2 teaspoons raspberry extract
  • a pinch of salt

Instructions

  1. Add the coconut oil, bakers chocolate, cocoa powder, Swerve sweetener to a pyrex measuring cup.
  2. Place in the microwave and cook for 1 minute. Take it out and stir for about 30 seconds. If everthing is melted add the raspberry extract and pinch of salt. If not put it back in the microwave for 30 seconds. You don't want to over cook the chocolate.
  3. If you candy molds are floppy like most silicone ones are, place them on the smallest baking sheet you can find or a plate. Pour the melted chocolate into the molds and place in the freezer for about 10 minutes until they have solidified.
  4. Store chocolates in an airtight container or freezer bag in the freezer or refrigerator. Note that they chocolates will melt a bit in your hands so you should not store them at room temperature.
